Sunday Night Menu with Recipes: Roasted pork loin, Turkey breast and Salmon, Roasted red potatoes and Salad.
Roasted Pork Loin
1 pork loin (up to 10 lbs
depending on the crowd)
Several cloves of Garlic
Coarse sea salt
Large grind pepper
Fresh Rosemary
Preheat oven to 400 degrees
Poke holes in loin with
sharp knife
Lightly salt and pepper the
loin
Crush garlic with press and
spread on loin
Chop rosemary and press
some garlic and rosemary into the holes
Put pork fat side down in
roasting pan (13x9x2) in oven and bake for 30 minutes
Roll over and cook till the
thermometer reads 145 degrees
Pull out and wrap in foil
and let rest for 10-15 minutes
Slice and serve.
Salmon A little lemon pepper and Teriyaki
Roasted Red Potatoes:
5
lbs. small red potatoes
Olive
oil
Italian
seasoning
Garlic
salt
Pour
about 1/3 cup olive on cookie sheet. Liberally sprinkle the spices and garlic
salt on oil. Place potatoes cut side
down on the cookie sheet. Bake at 400
until crispy on bottom side.
Salad with romaine & spring mix (Costco) + tomatoes, cucumbers and carrots
